If you are looking for a Healthy lunchbox snack, try these yummy Nut Free Brownies. Super easy to make and a hit with my 4 year old!
Ingredients:
- 1/2 Cup Sunflower Seeds
- 1/2 Cup Pumpkin Seeds
- 1/2 Cup Coconut Flakes
- 8 Dates
- 2 Tablespoons raw Cacao
- 1/4 Cup Rice Malt Syrup
- 1/4 Cup Coconut Oil
- 1 Tablespoon Chia Seeds
Method:
Blend Seeds, coconut, dates and cacao. Put all ingredients in bowl and mix in rice malt syrup, coconut oil and chia seeds. If too dry add a bit more coconut oil. Spoon into lined dish and pack down well. Sprinkle with coconut and place in fridge or freezer to set. Keep refriderated and enjoy!
Tips – To reduce the sugar content use less dates and Rice Malt Syrup and add in some Stevia. If following a sugarfree diet try replacing all dates and Rice Malt Syrup with stevia. You might need more coconut oil to make it all bind together.
